As someone who has Celiac disease I am grateful that you are addressing the mis-labeling of gluten free products. I am very careful and deliberate about what I ingest. I can only speak for myself, but when I eat something that contains even the most minute amount of gluten I get sick within 20 minutes. However what worries me about getting sick from ingesting gluten is not the upset stomach and other short-term symptoms, but the realization that the more that this auto-immune response happens, and causes damage to my digestive system, the greater likely-hood that I will one day develop other more serious diseases such as type 1 diabetes.
Based on the evidence that I've read from institutes like the Center for Celiac Research in Maryland, I believe that the correct and accurate labeling of gluten free foods will non only help numerous gluten-intolerant people avoid getting sick after eating , but also in the long term it will decrease the amount of serious illnesses that develop out of the consistent exposure to gluten in people with Celiac disease.
