Our comments are detailed in the attached file. In summary, we at SIRA Technologies strongly believe the USDA and FSIS should, when they make decisions on process changes to improve product traceability, also include the requirement that all shipments that must be kept cold to be safe have some Automatic Time/Temperature Indicator attached both to individual packages as well as entire case lots. The purpose of this is to ensure that perishable food items are never allowed to become too warm for long enough to significantly increase bacterial contamination of products during shipment. SIRA Technologies' own "Food Sentinel System" is one example of a solution that could readily be implemented to meet this requirement, without requiring extensive use of new data gathering hardware or software.
